As summer’s warmth fades and the air turns crisp, our pistou soup is there to bring comfort and warmth. It’s a hymn to well-being—a gentle delight that soothes the soul and nourishes the body. Made with white beans from Southwest France as a protein-rich base, and a medley of vegetables—crisp carrots, tender potatoes, juicy zucchinis, sweet turnips, fresh green beans, aromatic leeks, and sun-ripened tomatoes—it’s the very definition of a balanced and satisfying meal.
Considered one of our “meal soups,” Karine & Jeff’s pistou soup stands on its own but also pairs beautifully with a slice of garlic-rubbed bread. For a fresh twist, add a raw parsley leaf to complement the basil already in the recipe. A drizzle of olive oil to finish, and you’re transported straight to Provence.
